If I am understanding you correctly, you said in the old days people said to program in java, now they are saying program in PHP.
a programming career can be kinda hit or miss on what language you end up using. For me - becoming a PHP programmer was kinda something I fell into, rather then something that I intentionally went after. My advise to you as a new graduate would be this - get that first job. Don't care what language it is in - just get it. Get the experience that comes with it - experience works in any language. If you are interested in PHP and that isn't the language you were hired to code in, that is fine. Volunteer for an open source project, be active in the PHP community at the a forum of your choice, the irc channels and/or the mailing lists. After a year or 2 with general coding and open source experience - then you should go looking of a PHP job (though depending on how good and active you are in the OS world some may already come looking for you). Either way you will be spending a life time learning new things in the field since it is constantly changing and encompasses so many areas or the computer world. Whether it be in programming style, multiple technologies to learn (EX: ajax), new design technologies, database optimization, server benchmarking, or whatever - you will never be able to say - "I know it all"

lig summed it up... I've worked with many languages over the years but have been working in PHP (primarily) for the past 5. It's been a very rewarding and enjoyable experience.
