there are plenty of open-source forums you could look at... i guess it depends on how you define a forum, as all the sites i've come across which give tutorials aren't really authentic forums as far as i'm concerned because the messages aren't threaded (so there is no way to relate one reply to another)..
SO.. you could cheat, and basically make a news system with comments, only the news is categorized so it looks like a forum. which is what most people seem to do.
